Healthy Indulgence: Taco Style

We all like to indulge once in a while. Who are we kidding we like to indulge a lot. In a sea of fit fast-metabolism women, I unfortunately am not lucky enough to have that trait. In turn, I have to get creative in the kitchen and put together delicious foods that are healthy for the body. Yes, you read that right. Delicious foods that are healthy for you. It’s not a myth, it’s a real thing and I’m going to share an amazing alternative to the loved by all ‘Taco Tuesday.”

This recipe is based on the Fit Girls Guide original taco recipe called sweet potato tacos.

  • Miniature corn tortillas (3)
  • Mozzarella cheese (just a sprinkle will do)
  • Sweet Potatoes (1/2 cup)
  • Green Peppers (1/2 cup)
  • Onion (2 T)
  • Spinach (a handful)
  • Olive Oil (as needed)
  • Salsa/ Hot Sauce (2 T)
  • Spices of your choice

To begin, cut you veggies into strips, cubes, however you like to eat them best. Keep your sweet potato separated from the other vegetables. You’re going to place the sweet potatoes in a bowl with a splash of water for about one and a half minutes. This will precook the potatoes so that they don’t take too long in the pan.


After everything is chopped up, drizzle a little olive oil in the pan and set the heat to Medium/Medium-high. Then begin to sauté your vegetables. In this case, the green peppers, onion, and the sweet potato.  Once your veggies are cooked the way you like them, add various spices of your choice and throw in the spinach as it cooks extremely quickly. Once cooked, place veggies in bowl but don’t turn off heat to the pan. With the leftover oil in the pan heat the tortillas until desired crispness. Then on a plate, place the tortillas down. Fill the tortilla on one side with veggies and sprinkle cheese and salsa on top. Fold in half and enjoy!

As with any recipe you can substitute ingredients, add ingredients and make it a meal all your own. Keep in mind that it’s okay to give yourself a little wiggle room on some of your meals. You can add a little more or less to it to perfect the taste. A little dollop of sour cream on top of it all wont kill you.
