If you’re already tired of pumpkin spice, I am sorry.
But, actually, I’m not, because this pumpkin mug cake is the best pumpkin spice flavored treat you’ll eat this fall. It’s also a great reprieve from all the Halloween candy you may have prematurely eaten this year. This mug cake is completely gluten free and vegetarian, and you can actually feel good about eating it.
And possibly the best thing about this cake is it takes one minute and 15 seconds to cook. By using the microwave instead of the oven, you can cut cooking time exponentially and also make individual portions.
Ingredients (serves one):
1 1/2 tbsp. pureed pumpkin
2 tbsp. maple syrup
1/4 tsp. vanilla
1/4 tsp. pumpkin pie spice
5 1/2 tbsp. almond flour
1 tbsp. dark chocolate chips
1/3 cup chilled coconut cream
- Mix the egg, pumpkin, maple syrup, vanilla, spices and almond flour in the mug.
- Place chocolate chips in a small microwavable bowl, and microwave for 30 seconds.
- Pour the coconut cream into a glass bowl and beat with a hand mixer until the cream forms soft peaks. Sweeten with a drop of maple syrup.
- Put the mug in the microwave and cook on high for one minute and 15 seconds.
You can be fancy and remove the cake from the mug, put it on a plate, drizzle the chocolate gracefully over the cake and spoon on the coconut cream in luscious dollops. This is a great way to trick your friends into thinking you baked them a single serving of cake because you love them that much. You’ll know it’s a trick, but your friend will think it’s a wonderful treat!
